Rolled Pork Belly


Ingredients

  • 2: Kg good quality rolled pork. Ask your butcher to score the skin.
  • 1: Cup roughly chopped bacon
  • 2: Tablespoons fresh oregano
  • 1: Tablespoon thyme
  • 1: Teaspoon mustard
  • 1: Teaspoon garlic
  • 2: Tablespoons oil
  • 1: Teaspoon soy sauce
  • 1/2: Teaspoon rock salt
  • 1: Teaspoon black pepper
  • 1: Butternut
  • 1: Large onion
  • 4: Medium sweet potatoes
  • 2: Parsnips
  • 12: Baby potatoes

Steps

  • Step 1

    Take the bacon, oregano, thyme, mustard and garlic and mix in a bowl.

  • Step 2

    Take the mixture and insert it deep into the center of the pork roll.

  • Step 3

    Mix the oil, soy sauce, salt, pepper, and pepper and massage it onto the pork skin.

  • Step 4

    Peel and cube the butternut.

  • Step 5

    Peel and chop the onion into wedges.

  • Step 6

    Wash and cube the sweet potatoes and parsnips. Wash the baby potatoes.

  • Step 7

    Place all the vegetables in a roasting pan and coat them lightly with 1 teaspoon of oil.

  • Step 8

    Lay the pork roll on top of the vegetables and place in an oven set at 180 degrees and roast for 1 1/2 hours.

  • Step 9

    Take out of the oven, by this time the skin should be crisp and the meat and vegetables well cooked.

  • Step 10

    Allow the meat to rest for at least 10minutes before slicing. Serve with the roasted veggies, sweet corn, a salad and apple sauce
