Papa & Morogo/Mealie Pap & Spinach


Ingredients

  • 3: Cups Mealie meal/phofo ea papa
  • 2 ½: Cups water
  • 1: Kg combination of green leaves - spinach/kale/beetroot/pumpkin/turnip
  • 3: Tablespoons oil
  • ½: Medium onion
  • ½: Cup chicken/beef/vegetable stock
  • ½: Teaspoon chopped chilli
  • Salt to taste

Steps

  • Step 1

    Boil the water in a medium sized pot.

  • Step 2

    Slowly stir in the mealie meal until the consistency thickens, lower the heat and cover the pot.

  • Step 3

    Simmer for 20 then stir the mixture vigorously and cover for 10 min. Serve hot.

  • Step 4

    For the morogo/spinach, wash the leaves several times, pat dry, finely chop and set aside.

  • Step 5

    Then finely chop the onion and fry in a medium sized pan.

  • Step 6

    Add the stock and chilli to the onion and braise on medium heat, until the liquid has evaporated.

  • Step 7

    Add the leaves to the mixture and stir until the leaves have wilted.

  • Step 8

    Cook until there is no liquid left in the pot.

  • Step 9

    The leaves contain some water so you might need to increase the heat slightly, please do not cover the pan.

  • Step 10

    Add salt to taste and serve with hot mealie pap/papa.
