Maria’s Soup Delight


Ingredients

  • 2: Large leeks
  • 2: Large potatoes
  • 1: Medium sized turnip
  • 2: Medium sized carrots
  • 1: Small mackerel
  • 1: Teaspoon chopped garlic
  • 2: Tablespoons fresh chopped paprika
  • 1: Liter of good quality chicken/vegetable stock
  • ½: Liter of water
  • 2: Tablespoons oil
  • Salt and pepper to taste

Steps

  • Step 1

    Wash and chop the all the vegetables.

  • Step 2

    In a medium pot fry the leek for 5min on high heat.

  • Step 3

    Lower the heat to medium and toss in the potatoes, turnip and carrots, fry for 2min.

  • Step 4

    Add the garlic and paprika and cook for another 2min.

  • Step 5

    Add the stock and water to the pot, bring to a boil.

  • Step 6

    Cover the pot with a lid, lower the heat and simmer for 1hour.

  • Step 7

    Decant ½ of the soup, blend it and return to the pot.

  • Step 8

    Debone the mackerel and discard the skin, chop it into small pieces and add to the pot.

  • Step 9

    Add salt and pepper and simmer for 5min.
